Dear Eva and family, I had the pleasure of working with Gus first at the London Fishery and later he hired me as his sous chef at Pier 7 when it opened. As if he couldn't keep me busy enough at Pier 7, I also helped Eva earlier in the day at the Stage. Gus taught me so much about cooking: that it wasn't enough to cook the food well and present it beautifully, but that you had to add 'love' to it too. It didn't matter how busy it got, how hot it was in the summer... Gus always loved what he was doing, was incredibly patient and of course you always knew where he was because he always sang or hummed a tune. Gus loved his family and was always sharing stories and pictures of his children. While an allergy to all fish stopped me from working with and for Gus, I have maintained my love of cooking and my heart is filled with happy memories of being in the kitchen with him. May fond memories temper your sorrow. I am grateful I got to know him, even for a little while. Kind Regards, Maureen
